What do I do about an interviewee trying to read my notes during a workplace investigation?

How do you make sure that nobody is reading your notes? I still take handwritten notes during some in-person interviews because the clicking and the screen are deterrents to building rapport. That said, I don’t want people to see what I’m focusing on while writing notes. If you use two spiral notebooks and take your first spiral notebook and you, make a big puff out of it and then put the pad that you’re writing on, on top of that, this big puff will create a wall so that nobody can see what you’re writing in your investigation notes. Obviously, on Zoom, it doesn’t matter because my notebook is below the screen.
